I woke up this morning so excited to bake. I am going to a bridal shower today, and while I’m gone, my father-in-law and Dave are going to spend the afternoon with Ben. So my baking inspiration this morning was to provide the boys with some yummy afternoon snacks. My other inspiration is the huge lemon tree in our backyard that is just overflowing with lemons. We actually have a number of fruit trees in our back yard. We just picked the last of our oranges. In about a month we’ll have more peaches than we can handle, as well as crab apples, plums and well, the list goes on.
So Ben and I went into the garden last evening and picked a grocery bag full of lemons. Well, Ben drew in the dirt with a stick, while I picked lemons. Once I tried asking Ben to help me by putting the lemons in the bag, but he was equally likely to throw the lemons down the hill as actually put them in the bag, so he has escaped that chore for the time being! 
With my bowl full of lemons staring at me this morning, I whipped out a few cook books to see what my options were. I ended up selecting a Lemon Sugar Snap Cookie recipe from my Martha Stewart Baking book. I have had excellent luck with her recipes and it seemed a yummy way to enjoy our fruit. (also, I had all the other ingredients.)
Now, as a back up, because some people do not like lemon flavors, I am also baking a Spice Biscotti. A deceptively simple recipe with accents of cinnamon, ginger and cloves. Right now, they’re out of the oven, I have to slice them into the cookie shape, and then re-bake them for that biscotti crispiness.
While the biscotti are cooling, I’ve taken the dough from the lemon cookies out of the fridge, and put the first batch in the oven. The dough is yummy – we’ll see how the cookies turn out! While I waited to find out, I thought I’d sit down, sip some lemonade (another use for the lemons!) and say hi to you all.
So “HI!” What’s up? I have been so busy with Days and getting ready for the big may story we have. I’m sure you’ve seen stuff or read about it, right? Sami & Lucas’ Green Wedding? It’s been such an education – learning about all the eco-friendly ways you can have a wedding – or any party for that matter. It’s really neat to learn how many people are involved with getting Sami & Lucas’ wedding together – do you suppose that means they’re really getting married this time??? Hmmm… time for a subject change:
Days is on hiatus for the next two weeks. I am so grateful for the break. It’s been a very taxing schedule lately. And one of the hazards of having a child is that you get sick a lot. Lol. We seem to keep sharing it in our house – if Ben’s not sick, Dave is, and if they aren’t, I am. Or two at a time. Ugh! I think on the air shows last week you heard Sami with a pretty scratchy voice. And yesterday, at work, Lauren (Kate) was doing a great job of disguising how utterly exhausted she was from her cold. It’s going around!

Ooo – the oven’s beeping --- I have to rotate the cookies.

Okay, I’m back. Where was I? Oh, so yeah…Speaking of being sick – I had a pretty crazy mom moment last week. Ben’s nanny was sick at the last minute, so he came to the set with me. I felt terrible, but desperate, so I called my mom who thankfully was able to take care of him for the day for me. Because what would I do with Ben while I was shooting on set? Lol – he doesn’t exactly understand the whole having to be completely “quiet” thing anyway, and certainly not for the long stretch of time it would take to do the scenes. And some of the scenes had content I didn’t exactly want ben seeing anyway… lol…

Okay, so anyway, ben was so great during the morning routine of hair/make-up and rehearsal. He played with his truck on the set while the director talked to Bryan and I about our scenes. But it was a bit distracting when he started jumping on the bed on the set!  And then, whew, my mom/hero, arrived in time to whisk him off for a fun day of visiting horses, eating coffee-cake (but what am I going to say?) and teaching my dad how to throw a basketball – my dad told me afterwards that he had to rush out and buy a few rubber balls to have in the house for Ben’s visits. Yup, the kid is obsessed!

--- wow, the cookies are really tasty. But I can see now why the recipe called for me to leave the dough in the refrigerator for 2 hours. The cookies didn’t hold their shape really well. Good thing I put the dough back in the fridge, so perhaps the second batch will have the perfect texture. That’s what I get for being to anxious.

Ali they sound awesome...I think i'll have to buy her book so that I can make those, they sound delicious! I hope you have a great day at the bridal shower and Ben has a good time with his daddy and grandad!

Dear Lord, how do you manage it all? I'm exhausted just reading your day!

Ben sounds absolutely adorable! So when are we going to see some new pictures? He must have grown so big by now! I hope Ben didn't break the bed on set, that's Mommy and Bry-Bry's job ;) (well, their alteregos at least)

I'm thrilled with the green wedding idea. Can you tell what I voted for this week? (Not that I am obsessing about that little gift.

Have fun at the shower (no psycho rapists to haul the bride away, I hope) and enjoy your vacation (I'm off, too). Thanks for keeping us posted!

Hi Ali,

I have a great recipe for you if you ever want to make something for just adults. It's normally made as a rum cake, but to create smaller portions, I bake it in the mini-muffin pans. My rum muffins are a fan favorite at gatherings. The only trick is, anywhere you see water or oil, put more rum instead. ;) I've made this with spiced rum as well as pineapple rum. Both are wonderful. I haven't tried it yet, but next time I make it as a cake, I'll put brown sugar and pineapple on the bottom of the pan instead of pecans for a pineapple upside down cake. Emmmmm Very healthy. :)


INGREDIENTS

* 1 tablespoon butter, melted
* 1/4 cup white sugar
* 1/4 cup chopped pecans
* 1 (18.25 ounce) package yellow cake mix
* 1/2 cup water
* 1/2 cup vegetable oil
* 1/2 cup rum
* 4 eggs
*
* 1/4 cup butter
* 1/2 cup white sugar
* 1/8 cup water
* 1/8 cup rum

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Coat Bundt pan with 1 tablespoon melted butter. Sprinkle 1/4 cup of sugar and finely chopped pecans so that they coat the pan.
2. In a large bowl, combine the cake mix, 1/2 cup water (or rum) 1/2 cup oil (or rum), 1/2 cup rum and 4 eggs, mix until smooth and well blended. Spread evenly into the prepared pan.
3. Bake for 55 to 60 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.
4. In a saucepan over medium heat, combine 1/4 cup butter, 1/2 cup sugar, 1/8 cup water (or rum) and 1/8 cup rum. Bring to a boil, then remove from heat. Be careful with the heating because it can flare up. Poke holes into the bottom of the cake using a fork. Pour glaze over the hot cake. Allow cake to cool completely before removing from pan.

Wow - fresh fruit at your doorstep. That's neat. The cookies sound delicious. Who pays attention to the shape anyways? Just gobble them right down LOL. If you have any extra send them my way.

That's too bad about everyone being sick. I work in the ER trust me - that cold **** is going around the whole country! I just got the funniest image of you and Bryan doing a kiss scene and Ben smacking him."Not the daddy!" Anyone else remember that old dinosaur show with the baby who did that? "Not the mama!"

Well I was already tired - starting my 9th hour of my 12 hour shift - but after reading your day I'm bushed!

Wow! You are talented, cooking and posting. I’d get online and end up burning the cookies. Ben sounds like a cutie! Sounds like he may have a future business possibility in a lemonade stand. Thanks for dropping in and sharing your baking time. Bring samples next time! lol

Those cookies sound yummy! I love lemon cookies almost as much as Chocolate..lol Like I would give up chocolate:rolleyes: . It sounds like you have your very own fruit stand right in your own backyard. Sounds Hevenly.
I'm like you I love cooking when I have the time. With all the cooking that you do, have you ever thought of having a recipe exchange? I've got lots of them..:)
I'm loving Lucas and Sami's Green Wedding storyline. I hope this time it is going to happen, and I don't want to end up yelling at the TV again. Want to know what I voted for? Hummmm..Subject change Gee I wonder where I learned that..lol ;)

Hi ali , you sound like a fantastic cook lol unlike me!! However i do know how 2 make milk tart. (Thats like my favourite thing in the whole world it makes me happy. ) Ben sounds like the cutest thing. Just when i thought the weather was so perfect. It starts raining. (i have the flu. ) I remember watching you, on selimatuzi. And thinking how sweet you were. And YAH i was rite. TaTa - tee

I know what you mean about being around kids and getting sick. I work with pre-K kids (ages 4-5), and I've gotten sick a lot in the last six months. I was recently out for almost a week from a viral thing that I probably caught at work. :(

Funny. I remember that show. It was hilarious.

Ali, I hope you had fun at the bridal shower. Enjoy your two week vacation. Everybody says I work hard..I have a full time job(work at a college) and three part-time jobs(work at 2 different entertainment arenas and facilitate SAT test for HS students). I don't have any kids, but you do. WOW!!

Thanks for the post. You are to cute! LOL I was loving the breaks.. --cookies done-- :p Isn't that the truth about being a household germ factory? There are times I go through my house with Fabreeze and Disinfectants spraying like a mad woman because I feel surrounded by kudies. :eek:

Glad to hear all is well for the most part. Would of loved to see Ben jumping on the bed set at work! LOL

Sami's kiss that just aired with EJ, especially the one on US Thursdays episode took my breath away. Holly I am a teenager again feeling! Poor Ali having to juggle James and Bryan. How do you do it you poor thing! (teehee)

Green wedding idea is pretty cool. I want to stop the wedding desperatly, but what will be will be and taking an educational approach to it is a good thing. Although I am going to creep into my TV the day of and stop the wedding, MUA, MUAHA, MUAHAHAHAHA!!! (LOL Man I hope you know I am kidding! :p ) I figure for those LUMI fans out there it will make them happy for a bit. I can be patient...;)

Fruit trees? I am jealous! Just another bennifit to having a backyard. I gots ta' get me one of those. One of the things I have traded to live in Hawaii for now is a yard. But my sacrifice is well worth it. ;) Eventually I will though...(Shaka sighs and thinks of owning a house out here.)

Ali you know I love ya doll and am a huge fan. Regardless of how the storylines turn out, (fingers crossed EJAMI!) I back my Ali girl 100%! I think you are so very talented. I am super phsyc'd for your Biggest Looser gig. You will be wonderful and then others will get to see what a gem you are.

Supercool post! I guess that's what makes you so cool, you seem so accessible! Those trees in your yard sound really neat, only in CA (or FL or some other 'tropical paradise')...anyway, good luck with your upcoming schedule. Sounds like a ball!
