Ok here it is, I’m sharing family secrets now… You might want to put on a Dean Martin cd, seems to me the meatballs always come out better when Dino is keeping me company.



Lin Milano’s Sunday meatballs:



2lbs leanest chopped beef

2 eggs

½ cup grated parmesan cheese

½ cup season bread crumbs

Hand full of fresh parsley

3 cloves of garlic chopped in tiny pieces

Kosher salt, to your liking





In a large bowl, add meat, and all other ingredients

Wash hands and mix it all together, if it feels dry add

A handful of water, or if it’s too wet, add some more

Bread crumbs.



Roll into medium size balls, a handful!



Using a large frying pan, add a good amount of vegetable oil

and heat ‘till hot, add the meatballs, and cook ‘till dark

brown, and cooked inside and out.

Now you can add them to your sauce or eat them as is.



This whole process should not take more than an hour.



Keep me posted on who has made the meatballs...Oh and don't worry about the little black chin hair, just seems to grow as you roll.

At school we actually made meatballs, the recipes is very simular except we added in different herbs and not as much garlic I think, thats the Italian in it then I guess :p
My friend she is a vegetarian and we made then I think she used TVP or veggie mince, and it turned out pretty much the same in taste and look.
Thanks again Lin, who knows maybe I will make it tomorrow after school, or in school in my free classes... nah maybe not don't want to give away the family secret to my teachers :p

I stuck the thread so that we can sit back and relish in the wonderfuls flavors you have combined and not miss a beat.

If only I could rig it so that when ever anyone opened this thread Dino was playing that would be the cat's meow...:D

Can't wait to make them, probably this weekend!!

My boys (3 & 19 months) love Meatballs. My big boy calls them "Spaghetti Balls", so I can't wait to try out the new Spaghetti Balls on the boys, I usually use a sweet mild sausage, so this will be a nice change.

I'll let you know how the babies like them.

Turns out, I had ingredients on hand to make the meatballs for dinner tonight. The family loved them, including the babies. My 19 month old looked like he just rubbed dinner all over his face and head. My 3 year old (actually still 2, will be 3 on the 26th) drew a picture of the meatballs for you.

I didn't realize they were so colorful!!

ok I didnt find ground lean turkey in my country, there was only beef and chicken... so I used chicken because I dont eat red meat... and I was so afraid that it wont taste as good as yours or bad... anyways I did them with chicken... and here is goes...

I did what you said rolled them but as you can see they are in a bad shape :P

then my friend called me and asked me to go to eat at her place... so I left half the amount for my family and took half with me there to her house... and I cooked them there.... oh my good the smell while I was cooking was ummm oh my god I cant explain it, well you know the smell dont ya Lin?

Alright Lin, I’m back.

Don’t roll your eyes. There’ll be plenty of time for that before you finish reading this.

I’m feeling better and about half of my voice is back, so please bear with me as I type every other word.

I just picked up a few of the ingredients needed for your recipe. I might need to make a reduced batch because only a limited amount of food can fit into an SJT at one time- for example, 1 pound of healthy food- or 88 pounds of Dippin’ Dots. But don’t worry- if I end up doing a 1 pound recipe, I’ll just shape the meatballs as half-spheres.

Let me see what I got, compared to what's on your list.

2 lbs leanest chopped beef
I didn’t buy any meat yet. I’m leaving meat and the other peripheral ingredients until tomorrow.

2 eggs
Nope. Not yet.

I think we’re off to a great start.

3 cloves of garlic
Bingo! Just call me Emeril.

Hand full of fresh parsley
That sounds delicious, but I couldn't find any. The places I checked either didn’t carry it, or were implementing a new policy of not staying open during the dead of night. I don’t want to mention any names, but Ralph Albertson, you know who you are. I did pick up some chives.

½ cup seasoned bread crumbs
I got some rolls, and I’m pretty sure I can turn them into crumbs. I also got some Italian spaghetti seasonings.

½ cup grated Parmesan cheese
I couldn’t find the Parmesan cheese aisle.

An avocado
I’m hungry for an avocado.

I won’t mix the avocado with the other ingredients. It would be larger than most of the other meatballs.

Kosher salt
The Kosher variety wasn't easy to locate, but eventually I got it. And I hit a home run on this one. I
bought 3 lbs. (I might not use it all.)

This leaves us missing only the meat, eggs, cheese, water, and bowl- and I'm confident about at least the water and the bowl.

I’ll pick up with this tomorrow, and if my computer isn’t among the appliances that I cause to explode, I’ll post the results.

Don't worry, Lin. I have years of experience working at restaurants not many people ate at.

mmm Mona they look great!!! I haven't had a chance to make mine yet, I made currie the other day at school it was yummy lol I so can't wait to make the meatballs I love cooking! I am hoping to make them maybe on Sunday all my cousins are coming to my house :)

Ok- I’m back.

It’s 7:50 pm as I’m writing. The Loop appears to be down, so I’ll keep typing this in MS Word until the site comes back online, the meatballs are finished, or I trip a circuit breaker.

I just got back from Mr. Ralph’s and have a few more ingredients:

2 lb leanest chopped beef
I found some ground beef with 4% fat, but apparently it comes from smaller cattle because it was packaged as 1 pound.

2 eggs
I bought the 2 eggs, and got 10 for free.

½ cup grated Parmesan cheese
The cheese came in a bag, but I’ll find a way to shape the bag like a cup.

Jar of Maraschino cherries
Cherries are good. Don’t worry, I won’t mix them into the meatballs.

So it looks like I have everything I need, except a brain.

I’ll start to combine the ingredients and get back to you.

Back again. I’ve successfully turned the rolls into bread crumbs and applied some steak seasoning. Then I added the cheese.

The meat is in a large bowl. I’m about to add the egg and other ingredients.

I also ate a cherry.

I mixed everything together and rolled the meatballs- and then realized that I forgot the garlic. So I got 3 garlics (1½ for my half-batch) and began adding them. It seemed like a lot, but then I realized that the recipe called for 3 cloves of garlic rather than 3 whole garlics.

It’s corrected now, and my kitchen smells amazing.

I turned on my stove for the first time ever. It turns out that it runs on gas. Adventurous!

I snapped a few pics of the meatballs cooking. They haven’t been uploaded, which might make them hard for you to see. But I’ll do what I can about that tomorrow.

You can substitute turkey for red meat in most recipes...it's even healthier ;) :D :cool:

I make enchilada's, which call for ground hamburg, but you can make them with ground turkey instead ;) both are good :)

Here's my effort I couldn't find ground turkey so I use 7 Percent fat ground beef.

For you none Italian's thats Beans/Chickpeas in oil sounds funny
but taste wikkid!!!!
As for Dean martin i remember my nonno playing Volare ova n ova agin!
